Description
A quick and easy stir-fry of tender chicken breast pieces with crisp green beans in a sweet and savory honey-soy sauce.
Ingredients
For the Chicken and Green Beans:
- 1 lb chicken breasts, boneless and skinless, cut into 1-inch pieces
- 2 tsp minced garlic (freshly minced for best flavor)
- 1 tbsp vegetable oil
- 2 1/2 cups green beans, trimmed
- 1 tsp vegetable oil
- Salt and pepper to taste
For the Sauce:
- 2 tsp corn starch
- 1/4 cup low-sodium chicken broth
- 1/4 cup soy sauce (low sodium preferred)
- 3 tbsp honey
Instructions
- Heat 1 tbsp vegetable oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
- Add chicken pieces, season with salt and pepper, and cook until lightly browned and cooked through.
- Remove chicken from skillet and set aside. Add 1 tsp vegetable oil and green beans to skillet, stir-fry until crisp-tender.
- In a small bowl, whisk together cornstarch, chicken broth, soy sauce, and honey to make the sauce.
- Return chicken to skillet, pour in the sauce, and cook until sauce thickens and coats the chicken and green beans.
- Serve hot with rice or noodles if desired.
Notes
- Adjust honey and soy sauce for preferred sweetness and saltiness.
- Can substitute green beans with snap peas or broccoli.
