Description

Easy Cinnamon Roll Casserole is a delicious breakfast bake made with refrigerated cinnamon rolls soaked in a sweet mixture of milk, maple syrup, eggs, vanilla, and cinnamon. Baked until golden and fluffy, then finished with the cinnamon roll frosting, this easy seven-ingredient casserole is perfect for Christmas morning, brunch, or a cozy family breakfast.

Ingredients

  • 2 tubes refrigerated cinnamon rolls, with 8 cinnamon rolls per tube (12 oz each or 351 grams)
  • 1/4 cup salted butter, melted
  • 1/2 cup milk
  • 1/2 cup pure maple syrup
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9 × 13-inch baking dish with nonstick spray. Pour the melted butter into the prepared dish. Alternatively, place the butter in the dish and let it melt in the oven.
  2. Remove the cinnamon rolls from their packages, reserving the included frosting for later.
  3. Cut the cinnamon rolls into approximately 3/4-inch pieces and arrange them in the prepared baking dish.
  4. In a bowl, whisk together the milk, maple syrup, eggs, vanilla extract, and cinnamon until thoroughly combined and no streaks of egg remain.
  5. Pour the egg mixture evenly over the cinnamon roll pieces.
  6. Bake for 35–45 minutes, until the casserole is puffed and lightly golden brown.
  7. Allow the casserole to cool for 10–15 minutes. Drizzle the reserved cinnamon roll frosting over the top, then serve warm.

Notes

  • Cinnamon rolls: Use any brand of refrigerated, unbaked cinnamon rolls. Reserve the included frosting to drizzle over the casserole after baking.
  • Milk: Any type of milk or cream works, including non-dairy milk. Cream gives the casserole a richer flavor.
  • Maple syrup: Substitute honey or brown sugar if preferred.
  • Eggs: This updated recipe uses 3 eggs rather than the original 4.
  • Storage: Cool completely, transfer to an airtight container, and refrigerate for 3–4 days. Reheat portions in the microwave or oven. Store leftover frosting separately and add it after reheating.
  • Freezing: Freeze the casserole before or after baking. Wrap the whole dish well or freeze individual portions in freezer-safe bags for up to 1 month. Thaw in the refrigerator and reheat before serving.
  • Make-ahead serving: This casserole is a great option for holiday breakfasts, brunches, and family gatherings.
