Ingredients

  • For the Muffins
  • 2 cups all-purpose flour (sifted)
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup whole milk
  • 1/2 cup vegetable oil (or melted unsalted butter)
  • 1 large egg
  • For the Cinnamon Sugar Topping
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup butter, melted


Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease wells.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk milk, vegetable oil, and egg until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently just until combined. Do not overmix.
  5. Fill muffin cups evenly with batter.
  6. Brush or dip each muffin top with melted butter.
  7. Mix sugar and cinnamon, then coat each buttered muffin top.
  8. Bake for 18–20 minutes until golden brown.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

  • Sprinkle a pinch of sea salt on top for a sweet-salty twist.
