Description

These burrito bowls are packed with seasoned ground beef, cilantro lime rice, corn, black beans, and fresh toppings. A flavorful and easy meal prep option for busy weeks.


Ingredients

  • Toppings:
  • 2 small flour tortillas (cut into strips)
  • 1/2 cup vegetable oil
  • 1 ripe avocado
  • 2 teaspoons lime juice
  • 1/8 teaspoon salt
  • 2 Roma tomatoes, diced
  • 4 oz sour cream
  • 1 cup shredded Mexican cheese blend
  • Cilantro Rice:
  • 3 cups cooked rice
  • 3 tablespoons butter, melted
  • 2 tablespoons lime juice
  • 1/2 teaspoon cumin
  • 1/3 cup cilantro, chopped
  • Corn & Beans:
  • 1 cup corn
  • 1 cup black beans
  • 2 jalapeños, diced
  • 12 teaspoons hot sauce
  • 1/4 teaspoon each: garlic powder, onion powder, salt
  • Beef Mixture:
  • 1 lb ground beef
  • 1/2 cup onion, diced
  • 4 cloves garlic, minced
  • 1 packet taco seasoning
  • 2/3 cup water


Instructions

  1. Fry tortilla strips in hot oil until golden. Set aside and salt lightly.
  2. Mash avocado with lime juice and salt. Set aside.
  3. Mix cooked rice with butter, lime juice, cumin, and cilantro.
  4. Cook corn in reserved oil, add beans, jalapeños, spices, and heat through.
  5. Cook ground beef with onions until browned. Add garlic, seasoning, and water. Simmer until thickened.
  6. Assemble bowls with rice, corn/beans, and beef.
  7. Top with tomatoes, cheese, avocado, sour cream, and tortilla strips.
  8. Serve immediately.
