These burrito bowls are packed with seasoned ground beef, cilantro lime rice, corn, black beans, and fresh toppings. A flavorful and easy meal prep option for busy weeks.
Ingredients
- Toppings:
- 2 small flour tortillas (cut into strips)
- 1/2 cup vegetable oil
- 1 ripe avocado
- 2 teaspoons lime juice
- 1/8 teaspoon salt
- 2 Roma tomatoes, diced
- 4 oz sour cream
- 1 cup shredded Mexican cheese blend
- Cilantro Rice:
- 3 cups cooked rice
- 3 tablespoons butter, melted
- 2 tablespoons lime juice
- 1/2 teaspoon cumin
- 1/3 cup cilantro, chopped
- Corn & Beans:
- 1 cup corn
- 1 cup black beans
- 2 jalapeños, diced
- 1–2 teaspoons hot sauce
- 1/4 teaspoon each: garlic powder, onion powder, salt
- Beef Mixture:
- 1 lb ground beef
- 1/2 cup onion, diced
- 4 cloves garlic, minced
- 1 packet taco seasoning
- 2/3 cup water
Instructions
- Fry tortilla strips in hot oil until golden. Set aside and salt lightly.
- Mash avocado with lime juice and salt. Set aside.
- Mix cooked rice with butter, lime juice, cumin, and cilantro.
- Cook corn in reserved oil, add beans, jalapeños, spices, and heat through.
- Cook ground beef with onions until browned. Add garlic, seasoning, and water. Simmer until thickened.
- Assemble bowls with rice, corn/beans, and beef.
- Top with tomatoes, cheese, avocado, sour cream, and tortilla strips.
- Serve immediately.
