Description

These creamy Lemon Truffles are a quick and easy no-bake dessert made with cream cheese, fresh lemon zest, and a hint of sweetness. Perfect for lemon lovers, these bite-sized treats are smooth, tangy, and melt in your mouth.


Ingredients

  • 4 oz cream cheese or coconut butter
  • 2 tbsp butter or additional coconut butter
  • 3 tbsp powdered sugar or erythritol
  • Zest of 1 lemon
  • 3 oz white chocolate chips (optional)
  • 1 drop natural food coloring or a pinch of turmeric (optional)


Instructions

  1. Bring the cream cheese (or coconut butter) and butter to room temperature until softened.
  2. In a mixing bowl, combine the softened ingredients with powdered sugar, lemon zest, and optional food coloring or turmeric.
  3. Beat with a hand mixer until smooth and creamy. A fork can also be used if needed.
  4. Freeze the mixture for a few minutes until firm enough to scoop.
  5. Using a mini cookie scoop, portion into balls onto a parchment-lined plate.
  6. Freeze until firm.
  7. If desired, dip each truffle in melted white chocolate or coconut butter. Let the coating set before serving.
  8. Store leftovers in the refrigerator or freezer for best freshness.

Notes

  • For a smoother chocolate coating, stir 1/2 teaspoon of oil into the melted white chocolate.
  • For bar-style treats, spread the mixture into a container before chilling and cut into squares.
