Description

This Easy Mediterranean Oven Baked Fish is juicy and flavorful, with fresh herbs, lemon, garlic, and a colorful mix of vegetables. It is an irresistible Mediterranean-inspired dinner that is ready in under 30 minutes.


Ingredients

  • For the Fish
  • 2 fish fillets
  • 6 sprigs thyme, chopped
  • 3 sprigs rosemary, chopped
  • 1 teaspoon dried oregano
  • 2 teaspoons parsley, chopped or dried
  • 4 garlic cloves, minced or chopped, or 2 teaspoons garlic paste
  • 1 teaspoon basil, chopped, optional
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon sweet chili sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • For the Veggies
  • 1 cup cherry tomatoes
  • 1/2 cup pitted olives
  • 1 medium onion, diced
  • 1 zucchini, diced


Instructions

  1. Preheat the oven to 400°F and lightly grease or line a baking dish.
  2. Add the thyme, rosemary, oregano, parsley, garlic, basil, lemon zest, lemon juice, sweet chili sauce, salt, black pepper, and olive oil to a bowl. Mix well to make the marinade.
  3. Rub the marinade generously over both sides of the fish fillets. Set the fish aside and reserve about 1/2 tablespoon of the marinade.
  4. Add the cherry tomatoes, olives, onion, and zucchini to the remaining marinade. Mix well until the vegetables are evenly coated.
  5. Pour the vegetables into the prepared baking dish and place the fish fillets on top.
  6. Scrape any remaining marinade from the bowl and pour it over the fish.
  7. Bake on the middle rack at 400°F for about 15 minutes. Baking time will depend on the thickness of the fish fillets.
  8. Cook until the fish is flaky and reaches an internal temperature of 145°F.
  9. Remove from the oven and let the fish rest for about 5 minutes before serving.
