Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups green cabbage, shredded
  • 1 cup carrots, shredded
  • 4 green onions, thinly sliced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil (for cooking)


Instructions

  1. Slice the chicken into thin strips and chop the vegetables.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until golden brown (5–7 minutes).
  3. Stir in cabbage, carrots, and half of the green onions; stir-fry until vegetables are tender yet crisp (3–4 minutes).
  4. In a small bowl, mix soy sauce and sesame oil. Pour over the chicken and vegetables; stir to coat evenly.
  5. Cook for an additional 1–2 minutes; adjust seasoning if needed.
  6. Serve warm with soft pancakes or over rice.
