Description
This Easy Shepherd’s Pie has a savory ground beef filling with gravy and frozen vegetables, topped with mashed potatoes. Ready in under 30 minutes on the stove and broiled for a perfect golden top!
Ingredients
- 1 tablespoon olive oil
- ¾ cup yellow onion, finely diced
- 1 rib celery, finely diced
- 2 cloves garlic, minced
- 1 lb ground beef (85% lean)
- 2 tablespoons flour
- 1 tablespoon tomato paste
- ½ teaspoon dried thyme
- ½ cup chicken broth
- 1 cup brown gravy
- Salt and pepper, to taste
- 1 cup frozen mixed vegetables
- 3 cups mashed potatoes
Instructions
- Prepare mashed potatoes (homemade or store-bought).
- Heat oil in large pan over medium-high heat. Add onions and celery; sauté 3 minutes. Add garlic; cook 1 minute.
- Increase heat to high, add ground beef, cook until browned. Drain excess grease.
- Reduce heat to medium-high, sprinkle in flour, add tomato paste and thyme. Cook 1–2 minutes.
- Deglaze pan with chicken broth, scraping up browned bits. Add half the brown gravy and vegetables; stir until heated through.
- Season with salt and pepper, add more gravy if needed. Remove from heat.
- Transfer filling to a lightly greased dish. Spread mashed potatoes on top and rake fork lines.
- Broil 5 inches from heat at 550°F for ~5 minutes until potatoes are golden. Serve hot.
Notes
- Use store-bought or instant mashed potatoes for a shortcut.
- Optional: add a layer of cheddar cheese under the potatoes.
- Double recipe for larger dishes using a 9×13 pan or wide skillet.
