Description
Efo Riro (Nigerian Spinach Stew) is a mouthwatering, savory African stew made with spinach, peppers, tomatoes, mushrooms, and tender goat meat. Packed with bold flavors and wholesome ingredients, this versatile Nigerian stew is a delicious and comforting main course.
Ingredients
- 8 cups spinach, chopped
- 12 oz cooked meat, goat meat used, but any meat can be used
- 2 cups mushrooms
- 1/2 cup palm oil
- 2 Roma tomatoes
- 1 red bell pepper
- 1 habanero pepper
- 1 onion
- 1/4 cup water or stock
- 2 tsp bouillon powder
- 2 tsp cayenne pepper
- 1 tsp black pepper
- 2 tsp ground crayfish
- 1 tsp pepper flakes, optional
- 1 tsp salt, or to taste
Instructions
- Preparation: Blend the tomatoes, red bell pepper, habanero pepper, and half of the onion together using a food processor.
- Chop the other half of the onion and set aside.
- If using fresh spinach, chop it, wash it, squeeze out excess water, and leave it in a colander. If using frozen spinach, microwave it for a few minutes.
- Wash and drain the mushrooms.
- Cook the stew: Heat the palm oil in a pot over medium heat and add the chopped onions. Stir and cook for about 2 minutes.
- Add the blended tomato and pepper mixture and stir for about 1 minute.
- Add the bouillon powder, cayenne pepper, black pepper, ground crayfish, pepper flakes, and salt. Cook over medium heat for about 5 minutes.
- If using fresh spinach, add the water or stock and bring the mixture to a boil.
- Add the cooked goat meat, mushrooms, and any other meat you desire. Let it boil for another 5 minutes.
- Add the spinach and stir intermittently for about 5 minutes.
- Taste and add more salt or spices if desired.
- Garnish with additional red pepper flakes if desired and serve.
Notes
- This recipe serves 8 and contains about 5 net carbs per serving.
- Only add the stock or water if using fresh spinach.
- Leave the spinach on low heat for about 5 additional minutes if you prefer it softer and less chewy.
- For a less spicy stew, use only 1 tsp or 1/2 tsp of cayenne pepper.
- Mushrooms can be used to make this stew more versatile, including as part of a vegan version when the meat is omitted.
