Ingredients

  • 2 cups granulated sugar
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 4 cups powdered sugar
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 tbsps unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 tsp purple gel food coloring
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 12 tbsps heavy cream (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line cake pans.
  2. Sift together flour, cocoa powder, baking soda, and salt.
  3. Cream butter, oil, and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract and vinegar.
  5. Alternate adding dry ingredients and buttermilk to the mixture for smooth batter.
  6. Add purple gel food coloring to achieve desired shade.
  7. Pour batter into pans and bake 25–30 minutes. Test with a toothpick.
  8. Cool cakes in pans for 10 minutes, then transfer to wire racks.
  9. For frosting, blend cream cheese and butter, gradually add powdered sugar and vanilla. Adjust with heavy cream for consistency.
  10. Layer cake with frosting, top with second layer, and frost exterior. Decorate as desired.
