Warm up your fall evenings with this cozy Apple Cider Beef Stew! Tender chunks of halal beef simmer in a rich blend of apple cider, beef broth, and herbs for the perfect balance of savory and sweet. Comforting, hearty, and full of autumn flavor — ideal served over creamy mashed potatoes.
Ingredients
- 2 ½ lbs beef chuck, cut into large cubes (halal)
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 carrots, chopped
- 2 medium potatoes, cubed
- 2 cups apple cider (not vinegar)
- 2 cups beef broth (halal)
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce (halal)
- 1 tsp dried thyme
- 1 tsp rosemary
- 1 bay leaf
Optional for Garnish
- Fresh parsley or rosemary sprigs
Instructions
- Season & sear the beef: Pat beef cubes dry and season generously with salt and pepper. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear beef in batches until browned on all sides. Remove and set aside.
- Sauté aromatics: In the same pot, add diced onion and cook until softened, about 5 minutes. Stir in garlic and cook for 1 more minute until fragrant.
- Add vegetables & flavor base: Add carrots and potatoes, then stir in tomato paste, thyme, rosemary, and bay leaf.
- Deglaze & simmer: Pour in apple cider, beef broth, and Worcestershire sauce, scraping up any browned bits from the bottom of the pot. Return the beef to the pot and bring to a simmer.
- Cook low and slow: Cover and simmer on low heat for 2 to 2½ hours, or until the beef is tender and the flavors have melded beautifully.
- Serve: Remove bay leaf, adjust seasoning, and serve warm over mashed potatoes. Garnish with fresh parsley or rosemary if desired.
Notes
- Use fresh, unfiltered apple cider (not vinegar) for the best flavor balance.
- For a thicker stew, mash a few potatoes in the pot near the end of cooking.
- To make in a slow cooker: brown the beef first, then transfer all ingredients to a crockpot and cook on LOW for 8 hours or HIGH for 4–5 hours.
