This Garlic Mushrooms Cauliflower Skillet combines earthy mushrooms and sweet cauliflower, creating a flavorful, low-calorie dish perfect for busy nights.


Ingredients

  • 1 head cauliflower, cut into florets
  • 8 ounces mushrooms (cremini or button), sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup vegetable broth
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon red pepper flakes (optional)
  • 2 tablespoons butter (or olive oil for vegan option)
  • 1 tablespoon lemon juice (optional)
  • Fresh herbs to taste (optional)


Instructions

  1. Wash and cut the cauliflower into bite-sized florets. Slice the mushrooms and mince the garlic.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add mushrooms and cook for 5–7 minutes until golden and moisture is released.
  4. Add cauliflower florets and pour in vegetable broth. Cover and simmer.
  5. Cook for about 10 minutes until cauliflower is tender-crisp. Season with salt, pepper, and red pepper flakes.
  6. Stir in butter until melted. Add lemon juice or herbs if desired. Serve hot.
