Description

This hearty French Onion Beef Stew blends tender beef, caramelized onions, and rich broth into a luscious dish. Perfect for cozy nights and simple gatherings.


Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 3 tablespoons olive oil, divided
  • Salt and pepper to taste
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 4 cups beef broth
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • 3 large carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and diced
  • 1 cup red wine (optional)
  • 1 tablespoon all-purpose flour (optional, for thickening)
  • 1 tablespoon butter (optional, for thickening)


Instructions

  1. In a large pot or Dutch oven, heat 1 tablespoon olive oil over medium-high heat. Season beef cubes with salt and pepper, then brown in batches. Remove beef and set aside.
  2. Add remaining olive oil to the pot, reduce heat to medium. Cook sliced onions until soft and caramelized, about 20-25 minutes, stirring occasionally.
  3. Add minced garlic and tomato paste to onions, cook 2 minutes until fragrant.
  4. Return beef to the pot. Add Worcestershire sauce, beef broth, thyme, and bay leaf. Stir to combine.
  5. Bring to a boil, then reduce heat to low. Cover and simmer 1 hour.
  6. Add carrots and potatoes. If using, pour in red wine. Continue simmering 45–60 minutes until beef is tender and vegetables are cooked.
  7. For a thicker stew, mix flour and butter into a paste and stir in during the last 5 minutes of cooking.
  8. Remove bay leaf, adjust seasoning with salt and pepper, and serve hot.

Notes

  • For deeper onion flavor, add a splash of balsamic vinegar during caramelizing.
  • Red wine is optional but adds richness to the stew.
  • Can be made in advance; flavors improve the next day.
  • Serve with crusty bread for a hearty meal.
