Ingredients
- 3 tablespoons olive oil
- 1 1/2 pounds boneless skinless chicken breasts, pounded evenly
- 1 to 2 teaspoons poultry seasoning
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/2 cup chicken broth (halal-friendly alternative to wine)
- 3 tablespoons unsalted butter
- 1 tablespoon garlic, finely minced
- 2 teaspoons fresh parsley, optional
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken, season evenly, and cook 5 minutes without disturbing.
- Flip chicken and cook another 5 minutes, or until golden and cooked through. Remove and set aside.
- Carefully deglaze the pan with chicken broth, letting it bubble for a few seconds.
- Add butter and stir until melted.
- Add garlic and cook about 1 minute until fragrant.
- Turn off heat, return chicken to the skillet, coat in sauce, and spoon sauce over the top.
- Garnish with parsley if desired and serve immediately.
Notes
- Chicken broth is used instead of wine to keep the recipe halal.
- Add extra butter if you prefer more sauce.
- Store leftovers in the fridge up to 5 days or freeze up to 4 months.
