Ingredients

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups broccoli florets
  • 1/2 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup shredded mozzarella cheese
  • 4 oz cream cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon black pepper
  • 1/4 teaspoon salt, or to taste


Instructions

  1. Cut the chicken breasts into evenly sized bite-sized pieces.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chicken and cook for about 5 minutes until fully cooked and lightly browned.
  4. Season with the Italian seasoning, salt, and black pepper.
  5. Stir in the minced garlic and cook for 1 minute until fragrant.
  6. Add the broccoli florets and cherry tomatoes. Cook for about 5 minutes until the broccoli is tender-crisp.
  7. Add the spinach, shredded mozzarella, and cream cheese.
  8. Stir continuously for about 2 minutes until the cheeses are melted and the spinach has wilted.
  9. Remove from the heat, garnish with chopped fresh parsley if desired, and serve immediately.
