Ingredients
- For the Dish:
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)

Instructions
- Prepare the Chicken and Potatoes: Place the halved baby potatoes in the bottom of the slow cooker. Drizzle with olive oil, sprinkle with half the Italian seasoning, salt, and pepper, then toss to coat.
- Add the Chicken: Season chicken breasts with remaining Italian seasoning, salt, and pepper. Lay them on top of the potatoes.
- Mix the Sauce: In a small bowl, whisk together chicken broth, minced garlic, and Parmesan cheese. Pour the mixture evenly over the chicken and potatoes.
- Slow Cook: Cover and cook on Low for 6–7 hours or High for 3–4 hours, until chicken is tender and potatoes are soft.
- Finish and Serve: Stir everything gently to coat in the garlic-Parmesan sauce. Garnish with chopped parsley and an extra sprinkle of Parmesan before serving.
