Description

This Garlic Parmesan Crockpot Chicken and Potatoes is the ultimate easy comfort meal — tender, juicy chicken slow-cooked with buttery potatoes, fragrant garlic, and a cheesy Parmesan finish. A one-pot weeknight dinner that practically cooks itself!


Ingredients

  • For the Dish:
    • 4 boneless, skinless chicken breasts
    • 1.5 pounds baby potatoes, halved
    • 1 cup chicken broth
    • 1/2 cup grated Parmesan cheese
    • 4 cloves garlic, minced
    • 1 tablespoon Italian seasoning
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon red pepper flakes (optional)
    • 2 tablespoons olive oil
    • Fresh parsley, chopped (for garnish)


Instructions

  1. Prepare the Chicken and Potatoes: Place the halved baby potatoes in the bottom of the slow cooker. Drizzle with olive oil, sprinkle with half the Italian seasoning, salt, and pepper, then toss to coat.
  2. Add the Chicken: Season chicken breasts with remaining Italian seasoning, salt, and pepper. Lay them on top of the potatoes.
  3. Mix the Sauce: In a small bowl, whisk together chicken broth, minced garlic, and Parmesan cheese. Pour the mixture evenly over the chicken and potatoes.
  4. Slow Cook: Cover and cook on Low for 6–7 hours or High for 3–4 hours, until chicken is tender and potatoes are soft.
  5. Finish and Serve: Stir everything gently to coat in the garlic-Parmesan sauce. Garnish with chopped parsley and an extra sprinkle of Parmesan before serving.

Notes

  • For extra creaminess, stir in 1/4 cup heavy cream or a knob of butter during the last 15 minutes of cooking.
  • Try swapping baby potatoes for diced Yukon gold or red potatoes.
