Description

Golden Creamy Butter Beans simmered in coconut milk with turmeric, ginger, garlic and warm spices. This comforting, flavorful plant-based dish is perfect served with rice or crusty bread.


Ingredients

  • 12 tbsp coconut oil or olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 thumb-size piece ginger, minced (about 1½ tbsp)
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • Black pepper to taste
  • 1 tbsp tomato paste
  • 2 (540 ml) cans butter beans (lima beans), drained and rinsed
  • 1 cup full-fat coconut milk
  • 2 cups vegetable broth
  • Fresh cilantro for garnish


Instructions

  1. Heat coconut oil or olive oil in a large sauté pan over medium heat.
  2. Add diced onion and cook until translucent.
  3. Add garlic, ginger, turmeric, cumin seeds and black pepper. Cook for about 1 minute until fragrant.
  4. Stir in tomato paste and cook another minute to deepen the flavor.
  5. Add vegetable broth, coconut milk and butter beans. Stir well to combine.
  6. Bring to a gentle simmer and reduce heat to medium-low.
  7. Simmer for about 15 minutes until the beans thicken the sauce.
  8. Remove from heat, drizzle with extra coconut milk and garnish with chopped cilantro.
  9. Serve warm with toasted bread or rice.

Notes

  • You can substitute butter beans with cannellini, navy, or great northern beans.
  • Chickpeas also work but may require longer simmering to thicken the sauce.
  • This dish pairs well with rice, flatbread, or toasted sourdough.
