Description
Golden Creamy Butter Beans simmered in coconut milk with turmeric, ginger, garlic and warm spices. This comforting, flavorful plant-based dish is perfect served with rice or crusty bread.
Ingredients
- 1–2 tbsp coconut oil or olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 thumb-size piece ginger, minced (about 1½ tbsp)
- 1 tsp turmeric
- 1 tsp cumin seeds
- Black pepper to taste
- 1 tbsp tomato paste
- 2 (540 ml) cans butter beans (lima beans), drained and rinsed
- 1 cup full-fat coconut milk
- 2 cups vegetable broth
- Fresh cilantro for garnish
Instructions
- Heat coconut oil or olive oil in a large sauté pan over medium heat.
- Add diced onion and cook until translucent.
- Add garlic, ginger, turmeric, cumin seeds and black pepper. Cook for about 1 minute until fragrant.
- Stir in tomato paste and cook another minute to deepen the flavor.
- Add vegetable broth, coconut milk and butter beans. Stir well to combine.
- Bring to a gentle simmer and reduce heat to medium-low.
- Simmer for about 15 minutes until the beans thicken the sauce.
- Remove from heat, drizzle with extra coconut milk and garnish with chopped cilantro.
- Serve warm with toasted bread or rice.
Notes
- You can substitute butter beans with cannellini, navy, or great northern beans.
- Chickpeas also work but may require longer simmering to thicken the sauce.
- This dish pairs well with rice, flatbread, or toasted sourdough.
