Description

These Greek Chicken Bowls are an easy halal meal prep recipe packed with juicy marinated chicken, fresh vegetables, chickpeas, feta, and a flavorful homemade dressing.


Ingredients

  • 1 ¼ lbs halal boneless/skinless chicken breasts
  • Salt/pepper, to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried dill
  • 1/3 cup Greek salad dressing (halal)
  • 1/3 cup chicken broth (instead of wine)
  • 3 cloves garlic, minced
  • 1 (16 oz.) can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 2 cups iceberg lettuce
  • ¼ cup red onions, sliced
  • ¾ cup olives (kalamata/green/black)
  • 1 cup feta cheese, crumbled
  • 1 lemon, sliced
  • 2 mini pita breads, toasted and sliced
  • Fresh parsley, chopped


Instructions

  1. Slice the chicken in half lengthwise and pound to ½ inch thickness. Pat dry and season with salt, pepper, oregano, and dill.
  2. Marinate chicken in Greek dressing for 20–30 minutes.
  3. Whisk together sauce ingredients and set aside.
  4. Heat oil over medium-high heat and cook chicken 3–4 minutes per side until golden. Let rest, then slice.
  5. In the same skillet, add chicken broth and garlic. Simmer for 2–3 minutes.
  6. Add sauce mixture and cook until thickened. Remove from heat.
  7. Assemble bowls with lettuce, chicken, chickpeas, vegetables, olives, feta, lemon, and pita.
  8. Drizzle sauce on top, garnish with parsley, and serve.

Notes

  • Use halal-certified Worcestershire sauce or omit it.
  • Chicken broth replaces wine for a halal version.
