Description
These Greek Chicken Bowls are an easy halal meal prep recipe packed with juicy marinated chicken, fresh vegetables, chickpeas, feta, and a flavorful homemade dressing.
Ingredients
- 1 ¼ lbs halal boneless/skinless chicken breasts
- Salt/pepper, to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried dill
- 1/3 cup Greek salad dressing (halal)
- 1/3 cup chicken broth (instead of wine)
- 3 cloves garlic, minced
- 1 (16 oz.) can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- 2 cups iceberg lettuce
- ¼ cup red onions, sliced
- ¾ cup olives (kalamata/green/black)
- 1 cup feta cheese, crumbled
- 1 lemon, sliced
- 2 mini pita breads, toasted and sliced
- Fresh parsley, chopped
Instructions
- Slice the chicken in half lengthwise and pound to ½ inch thickness. Pat dry and season with salt, pepper, oregano, and dill.
- Marinate chicken in Greek dressing for 20–30 minutes.
- Whisk together sauce ingredients and set aside.
- Heat oil over medium-high heat and cook chicken 3–4 minutes per side until golden. Let rest, then slice.
- In the same skillet, add chicken broth and garlic. Simmer for 2–3 minutes.
- Add sauce mixture and cook until thickened. Remove from heat.
- Assemble bowls with lettuce, chicken, chickpeas, vegetables, olives, feta, lemon, and pita.
- Drizzle sauce on top, garnish with parsley, and serve.
Notes
- Use halal-certified Worcestershire sauce or omit it.
- Chicken broth replaces wine for a halal version.
