Description

This yummy Green Pizza is topped with vibrant green vegetables, pesto, feta, artichokes, and broccoli. Easy to make and packed with flavor, it’s a colorful, satisfying vegetarian main course perfect for lunch or dinner.


Ingredients

  • For Pesto:
    • 1/4 cup chopped walnuts
    • 2 cloves garlic
    • 1 cup basil leaves, lightly packed
    • 1 cup spinach leaves, lightly packed
    • 1/2 cup shredded Parmesan cheese
    • 1/2 cup extra virgin olive oil
    • Kosher salt and pepper, to taste
  • For Pizza:
    • Nonstick spray or olive oil
    • 2 heads broccoli, cut into florets
    • 1 lb (454 g) pizza dough
    • 1 can (14 oz / 397 g) quartered artichoke hearts, drained
    • 8 oz (227 g) shredded mozzarella (about 2 cups)
    • 1 cup crumbled feta


Instructions

  1. Preheat oven to 425°F (220°C). Lightly coat a baking sheet or pizza pan with nonstick spray or olive oil.
  2. Prepare Pesto: Toast walnuts in a skillet over medium heat, then let cool. Combine walnuts, garlic, basil, and spinach in a food processor. Add Parmesan, olive oil, salt, and pepper; process until smooth. Set aside.
  3. Prepare Pizza: Steam broccoli in a microwaveable dish with a lid for 3–4 minutes until just tender. Drain and cool.
  4. Place pizza dough on pan and press to edges. Spread 1/2 of the pesto over the dough.
  5. Sprinkle 3/4 of the mozzarella over pesto. Distribute broccoli and artichokes evenly. Top with remaining mozzarella and sprinkle feta on top.
  6. Bake pizza for 25–35 minutes until crust is browned and cheese lightly golden. Let cool slightly, then cut and serve.

Notes

  • Let pizza dough rest if it contracts when spreading to relax gluten.
