Festive Grinch Cookies that are soft, chewy, and pepperminty with a vibrant green color and a cute red heart topping. Perfect for holiday celebrations!
Ingredients
- 15.25 ounces white cake mix (432 g box)
- 8 tablespoons unsalted butter, softened
- 2 large eggs, room temperature
- 2 teaspoons peppermint extract (or mint extract)
- ½ teaspoon vanilla extract
- Green gel food coloring
- ¼ cup powdered sugar (32 g)
- 3 tablespoons cornstarch
- Red heart-shaped sprinkle or cinnamon
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine cake mix, butter, eggs, peppermint extract, vanilla extract, and green food coloring. Mix until a smooth dough forms.
- In a small bowl, combine powdered sugar and cornstarch.
- Roll dough into small balls, then coat lightly in the powdered sugar mixture.
- Place on prepared baking sheet and gently press a red heart-shaped sprinkle on top of each cookie.
- Bake for 10–12 minutes, until edges are set but centers are soft.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Adjust green food coloring to achieve your desired Grinch color.
- Store in an airtight container for up to 5 days.
- For extra peppermint flavor, drizzle with a light peppermint glaze.
