Description

Festive Grinch Cookies that are soft, chewy, and pepperminty with a vibrant green color and a cute red heart topping. Perfect for holiday celebrations!


Ingredients

  • 15.25 ounces white cake mix (432 g box)
  • 8 tablespoons unsalted butter, softened
  • 2 large eggs, room temperature
  • 2 teaspoons peppermint extract (or mint extract)
  • ½ teaspoon vanilla extract
  • Green gel food coloring
  • ¼ cup powdered sugar (32 g)
  • 3 tablespoons cornstarch
  • Red heart-shaped sprinkle or cinnamon


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine cake mix, butter, eggs, peppermint extract, vanilla extract, and green food coloring. Mix until a smooth dough forms.
  3. In a small bowl, combine powdered sugar and cornstarch.
  4. Roll dough into small balls, then coat lightly in the powdered sugar mixture.
  5. Place on prepared baking sheet and gently press a red heart-shaped sprinkle on top of each cookie.
  6. Bake for 10–12 minutes, until edges are set but centers are soft.
  7. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Adjust green food coloring to achieve your desired Grinch color.
  • Store in an airtight container for up to 5 days.
  • For extra peppermint flavor, drizzle with a light peppermint glaze.
