Description

Sweet Chili Ground Beef and Brussels Sprouts is a quick and flavorful 30-minute skillet dinner made with lean ground beef, shredded Brussels sprouts, sweet chili sauce, soy sauce, and fresh lime juice. It’s the perfect balance of sweet, savory, and slightly spicy flavors for an easy weeknight meal.


Ingredients

  • 1 pound lean ground beef
  • 1/2 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper, to taste
  • 1/3 cup thinly sliced green onions
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon sriracha (optional)
  • 1 tablespoon avocado oil
  • 1 pound shredded Brussels sprouts
  • 1/2 cup sweet chili sauce
  • Juice of 1/2 lime
  • Sesame seeds, for garnish (optional)


Instructions

  1. Add the ground beef to a large skillet and crumble it as it cooks over medium-high heat.
  2. Stir in the green onions, garlic powder, soy sauce, sriracha (if using), salt, and black pepper. Cook until the beef is browned and fully cooked.
  3. Transfer the cooked beef to a plate and set aside.
  4. Add the avocado oil to the same skillet, then add the shredded Brussels sprouts. Season with salt and pepper.
  5. Sauté the Brussels sprouts until tender and lightly caramelized, about 6-8 minutes.
  6. Return the cooked ground beef to the skillet.
  7. Add the sweet chili sauce and fresh lime juice. Stir until everything is evenly coated and heated through.
  8. Garnish with sesame seeds if desired and serve immediately over rice or your favorite grain.

Notes

  • Add extra sriracha or red pepper flakes for more heat.
  • Ground turkey or chicken can be substituted for the ground beef.
  • Serve over white rice, brown rice, cauliflower rice, or noodles.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
