  • 2 tablespoons all-purpose flour
  • 2 cups low-sodium beef broth
  • 1 cup frozen peas

For the Biscuit Topping:

  • 2 cups all-purpose flour, spooned and leveled
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 6 tablespoons salted butter, cold
  • ¾ cup buttermilk
  • ½ cup cheddar cheese, shredded


Instructions

  1. Cook the Beef: In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking up the meat as it cooks. Drain excess fat if needed.
  2. Add Vegetables: Add diced onion, garlic, carrots, and potatoes. Cook for 5–7 minutes until slightly softened.
  3. Flavor and Thicken: Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper. Sprinkle in flour and cook for 1–2 minutes. Slowly pour in beef broth, stirring constantly until the mixture thickens slightly.
  4. Add Peas: Stir in frozen peas. Simmer for 2–3 minutes, then transfer the filling to a greased 9×13-inch baking dish.
  5. Prepare Biscuit Dough: In a bowl, whisk together flour, baking powder, and baking soda. Cut in cold butter with a pastry cutter until the mixture resembles coarse crumbs. Stir in cheddar cheese and buttermilk just until combined.
  6. Assemble: Drop spoonfuls of biscuit dough evenly over the beef filling.
