Description

Ground Turkey Zucchini Casserole is a healthy, comforting baked dinner featuring lean ground turkey, tender zucchini, diced tomatoes, Italian herbs, and gooey mozzarella cheese. This easy low-fat casserole is perfect for busy weeknights and family dinners.


Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (14-ounce) can diced tomatoes, drained
  • Cheese
  • 1 cup shredded mozzarella cheese
  • Seasonings
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
  2. Heat the olive oil in a large skillet over medium heat. Sauté the onion and garlic for about 2 minutes until softened.
  3. Add the ground turkey and cook for 5-6 minutes, breaking it apart until browned.
  4. Stir in the drained diced tomatoes, Italian herbs, salt, and black pepper. Simmer for 3-4 minutes.
  5. Arrange half of the sliced zucchini in the prepared baking dish.
  6. Top with half of the turkey mixture and half of the mozzarella cheese.
  7. Repeat the layers with the remaining zucchini, turkey mixture, and mozzarella cheese.
  8. Bake uncovered for 30-35 minutes until the casserole is bubbly and the cheese is melted and lightly golden.
  9. Let the casserole rest for 5 minutes before serving.
