Description

Heavenly Banana Pudding Cheesecake Bars – a creamy, sweet and irresistible dessert that blends classic banana pudding with velvety cheesecake over a buttery Nilla wafer crust. Perfect for parties, potlucks, or a decadent treat anytime!


Ingredients

For the Crust

  • 1½ cups crushed Nilla Wafers
  • 5 tbsp butter, melted
  • 2 tbsp sugar
  • Pinch of sea salt

For the Filling

  • (8-oz) blocks cream cheese, softened
  • ½ cup sugar
  • 1½ cups whipped topping
  • 1 (3.4-oz) package instant banana pudding mix
  • 1¾ cups whole milk

For the Topping

  • Whipped topping
  • ½ banana, sliced
  • 9 Nilla Wafers


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch square pan with parchment paper.
  2. In a mixing bowl, combine crushed Nilla wafers, melted butter, sugar, and a pinch of sea salt. Press the mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 8–10 minutes. Remove from the oven and allow it to cool completely.
  4. In a large bowl, beat the softened cream cheese with sugar until smooth and creamy.
  5. In a separate bowl, whisk together banana pudding mix and whole milk until thickened.
  6. Fold the pudding mixture into the cream cheese mixture.
  7. Fold in the whipped topping until smooth and fully combined.
  8. Spread the filling evenly over the cooled crust.
  9. Top with more whipped topping, banana slices, and Nilla wafers.
  10. Refrigerate for at least 4 hours, or until firm enough to slice into bars.

Notes

  • For cleaner slices, freeze the bars for 30 minutes before cutting.
  • You can replace whole milk with 2% milk, but the texture may be slightly softer.
  • Add extra banana slices between layers for stronger banana flavor.
