Ingredients
- For the cookies:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 large egg
- 1 tsp vanilla extract
- Zest of 1 lemon
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- For the glaze (optional):
- 1/2 cup powdered sugar
- 1–2 tbsp fresh lemon juice
Instructions
- Preheat oven: Set to 350°F (175°C) and line a baking sheet with parchment paper.
- Make the dough: Cream butter, granulated sugar, and powdered sugar until fluffy. Add the egg, vanilla extract, and lemon zest; beat until combined.
- Add dry ingredients: In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into the wet ingredients until a soft dough forms.
- Shape and bake: Scoop dough into 1-inch balls, place on the baking sheet, and flatten slightly. Bake 10–12 minutes or until edges are lightly golden.
- Glaze (optional): Whisk powdered sugar with lemon juice until smooth. Drizzle or dip cooled cookies for an extra zesty finish.
Notes
- For extra lemon punch, add 1/2 tsp lemon extract to the dough.
- Store in an airtight container at room temperature for up to 4 days.
