Description

These Heavenly Lemon Cookies are soft, buttery, and bursting with fresh lemon flavor! Topped with a sweet-tart glaze, they’re perfect for spring, tea parties, or anytime you crave a bright citrusy treat.


Ingredients

  • For the cookies:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • For the glaze (optional):
  • 1/2 cup powdered sugar
  • 12 tbsp fresh lemon juice


Instructions

  1. Preheat oven: Set to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the dough: Cream butter, granulated sugar, and powdered sugar until fluffy. Add the egg, vanilla extract, and lemon zest; beat until combined.
  3. Add dry ingredients: In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into the wet ingredients until a soft dough forms.
  4. Shape and bake: Scoop dough into 1-inch balls, place on the baking sheet, and flatten slightly. Bake 10–12 minutes or until edges are lightly golden.
  5. Glaze (optional): Whisk powdered sugar with lemon juice until smooth. Drizzle or dip cooled cookies for an extra zesty finish.

Notes

  • For extra lemon punch, add 1/2 tsp lemon extract to the dough.
  • Store in an airtight container at room temperature for up to 4 days.
