Description

These Heavenly Summer Peach Bars feature a buttery crust, juicy peach filling, and a crunchy crumble topping. Perfect for summer dessert, served plain or with ice cream!


Ingredients

    • For the Crust:
    • 1 ½ cups all-purpose flour
    • ½ cup granulated sugar
    • ½ tsp salt
    • ¾ cup cold unsalted butter, cubed

 

    • For the Peach Filling:
    • 3 cups fresh peaches, diced (or frozen, thawed & drained)
    • 1/3 cup granulated sugar
    • 2 tbsp brown sugar
    • 1 tbsp cornstarch
    • 1 tbsp lemon juice
    • ½ tsp vanilla extract
    • ¼ tsp cinnamon

 

  • For the Crumble Topping:
  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ tsp cinnamon
  • ½ cup cold unsalted butter, cubed


Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper. Mix flour, sugar, and salt. Add cold butter and rub with fingertips until crumbly. Press into pan and bake 12–15 minutes until lightly golden.
  2. Make the Peach Filling: Combine diced peaches, sugars, cornstarch, lemon juice, vanilla, and cinnamon in a large bowl. Toss well and set aside.
  3. Prepare the Crumble Topping: Mix flour, oats, brown sugar, and cinnamon. Add cold butter and pinch together until pea-sized crumbs form.
  4. Assemble: Spread peach filling over baked crust. Sprinkle crumble topping evenly on top.
  5. Bake: Bake 35–40 minutes until topping is golden and peaches are bubbly.
  6. Cool & Serve: Cool completely for clean slices or chill 1 hour for firmer bars. Serve plain or with vanilla ice cream.

Notes

  • Use fresh, ripe peaches for the best flavor, or frozen peaches that are drained thoroughly.
  • Optional: add a pinch of nutmeg to the filling for extra warmth.
