These Heavenly Summer Peach Bars feature a buttery crust, juicy peach filling, and a crunchy crumble topping. Perfect for summer dessert, served plain or with ice cream!

- For the Crust:
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ tsp salt
- ¾ cup cold unsalted butter, cubed

- For the Peach Filling:
- 3 cups fresh peaches, diced (or frozen, thawed & drained)
- 1/3 cup granulated sugar
- 2 tbsp brown sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- ½ tsp vanilla extract
- ¼ tsp cinnamon
- For the Crumble Topping:
- 1 cup all-purpose flour
- ½ cup rolled oats
- ½ cup brown sugar
- ½ tsp cinnamon
- ½ cup cold unsalted butter, cubed
Instructions
- Prepare the Crust: Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper. Mix flour, sugar, and salt. Add cold butter and rub with fingertips until crumbly. Press into pan and bake 12–15 minutes until lightly golden.
- Make the Peach Filling: Combine diced peaches, sugars, cornstarch, lemon juice, vanilla, and cinnamon in a large bowl. Toss well and set aside.
- Prepare the Crumble Topping: Mix flour, oats, brown sugar, and cinnamon. Add cold butter and pinch together until pea-sized crumbs form.
- Assemble: Spread peach filling over baked crust. Sprinkle crumble topping evenly on top.
- Bake: Bake 35–40 minutes until topping is golden and peaches are bubbly.
- Cool & Serve: Cool completely for clean slices or chill 1 hour for firmer bars. Serve plain or with vanilla ice cream.
Notes
- Use fresh, ripe peaches for the best flavor, or frozen peaches that are drained thoroughly.
- Optional: add a pinch of nutmeg to the filling for extra warmth.
