Description

Homemade Ground Beef Pasta Soup is a hearty and flavorful meal made with browned beef, onions, tomato paste, beef broth, pasta, and mixed vegetables. Perfect for a quick, comforting dinner.


Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • 6 cups beef broth
  • 14 oz diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp garlic powder
  • 1 whole bay leaf
  • 1.75 cups macaroni
  • 1.5 cups frozen mixed vegetables


Instructions

  1. Heat a large pot over medium-high heat. Add ground beef and chopped onion, breaking the beef apart as it cooks until browned and onions are softened, about 5-7 minutes. Drain excess fat, leaving a thin coating for flavor.
  2. Add tomato paste, stirring 1-2 minutes to deepen flavor. Pour in beef broth, diced tomatoes with juice, Worcestershire sauce, oregano, basil, garlic powder, and bay leaf. Stir well to combine.
  3. Bring to a boil, reduce heat to medium-low, and simmer gently for 5 minutes to allow flavors to infuse.
  4. Stir in macaroni and frozen mixed vegetables. Return to a gentle boil, reduce heat to medium, and simmer uncovered for 8-10 minutes, stirring occasionally, until pasta is tender and vegetables are heated through.
  5. Remove bay leaf, adjust seasoning with salt and pepper, and serve hot.
