Ingredients
- 1 cup vital wheat gluten (substitute with chickpea flour for gluten-free)
- 1 tbsp smoked paprika (or regular paprika)
- 1 tsp garlic powder (or fresh garlic)
- 1 tsp fennel seeds (or anise seeds)
- 1 tsp sea salt (low-sodium optional)
- 1 tsp onion powder (or fresh onion)
- 1 tsp dried oregano (or Italian seasoning)
- 1 tbsp dried parsley (or fresh parsley)
- 1 tsp black pepper
- 1/2 tsp chili flakes (optional)
- 1 cup low-sodium vegetable broth (or water)
- 2 tbsp tomato paste
- 2 tbsp avocado oil (or any vegetable oil)
- 2 tbsp soy sauce (or tamari)
- 1 tsp liquid smoke (optional)
Instructions
- Combine dry ingredients in a large mixing bowl.
- Mix wet ingredients in a separate bowl until well combined.
- Form a dough by mixing wet and dry ingredients together.
- Shape the dough into two logs and wrap in aluminum foil.
- Steam the wrapped logs for 30–40 minutes until firm.
- Cool logs completely before slicing and serving.
