Ingredients
- For the Meatloaf:
- 1 ½ lbs ground beef (80/20, halal)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ cup breadcrumbs
- ¼ cup milk
- 1 egg
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce (halal substitute)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp dried thyme
- For the Glaze:
- ¼ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp mustard
- For the Mashed Potatoes:
- 2 lbs potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup warm milk
- Salt and pepper, to taste
- For the Corn:
- 2 cups sweet corn (fresh, canned, or frozen)
- 1 tbsp butter
- Salt and pepper, to taste
- For the Gravy:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 ½ cups beef broth (halal)
- Salt and pepper, to taste
Instructions
- Preheat oven: Preheat to 375°F (190°C) and line a loaf pan with parchment or lightly grease it.
- Prepare the meatloaf mixture: In a large bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, salt, pepper, paprika, and thyme. Mix until just combined — don’t overmix.
- Shape and bake: Transfer to the prepared loaf pan, pressing evenly. In a small bowl, mix together glaze ingredients (ketchup, brown sugar, mustard) and spread half on top of the meatloaf.
- Bake: Bake for 45–55 minutes. Halfway through, brush with remaining glaze. Internal temperature should reach 160°F (71°C).
- Make the mashed potatoes: While the meatloaf bakes, boil potatoes in salted water until fork-tender (12–15 minutes). Drain, then mash with butter, milk, salt, and pepper until creamy.
- Prepare the corn: Heat butter in a pan, add corn, season with salt and pepper, and cook until warmed through.
- Make the gravy: In a saucepan, melt butter, whisk in flour, and cook 1–2 minutes. Gradually whisk in beef broth and stir until thickened. Season with salt and pepper.
