Delicious Honey Glazed Carrots & Green Beans – a quick, easy, and flavorful vegetarian side dish perfect for any meal.
Ingredients
- 1 pound carrots, peeled and sliced
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 20–25 minutes, stirring halfway through, until carrots are tender and caramelized and green beans are tender-crisp.
- Remove from oven, transfer to a serving dish, and garnish with chopped fresh parsley.
- Serve immediately.
