Description

Delicious Honey Glazed Carrots & Green Beans – a quick, easy, and flavorful vegetarian side dish perfect for any meal.


Ingredients

  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley, for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast for 20–25 minutes, stirring halfway through, until carrots are tender and caramelized and green beans are tender-crisp.
  5. Remove from oven, transfer to a serving dish, and garnish with chopped fresh parsley.
  6. Serve immediately.
