Description

This keto lasagna is comforting and delicious, layering low-carb noodles, ricotta, mozzarella, and savory meat sauce for the ultimate keto comfort food. Perfect for a hearty low-carb meal.


Ingredients

  • Keto Lasagna Noodles:
  • 8 ounces cream cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup parmesan cheese
  • 3 large eggs
  • Lasagna:
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 pound ground beef
  • 3/4 cup marinara sauce (or keto-friendly sauce)
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese


Instructions

  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine cream cheese, mozzarella, and parmesan. Microwave in 30-second intervals until mostly melted.
  3. Add eggs and whisk to form a smooth batter. Transfer to baking sheet and bake 15 minutes until edges firm. Let cool.
  4. Heat oil in a non-stick pan over medium heat. Sauté onion and garlic for 5 minutes. Add ground beef, cook 3 minutes, then stir in marinara sauce. Cook another 5 minutes and remove from heat.
  5. Assemble lasagna in an 8×8-inch foil-lined pan. Layer keto sheets, ricotta, meat sauce, and mozzarella. Repeat until all ingredients are used.
  6. Bake 30–35 minutes until top is golden and sauce is bubbling. Let cool 5 minutes before serving.

Notes

  • Use keto spaghetti sauce, pizza sauce, pomodoro, or sugo as alternatives.
  • Store leftovers in fridge up to 1 week or freezer up to 6 months.
