This quick and easy Keto Reuben in a Bowl has all the delicious flavors of a classic Reuben sandwich without all the carbs. Loaded with corned beef, melty Swiss cheese, and creamy Russian dressing, it’s perfect for a low-carb dinner!
Ingredients
- 1 bag coleslaw mix
- 1 pound corned beef, cut into strips
- 2–3 tbsp butter
- 1 cup Swiss cheese, shredded
- Scallions, sliced
- For the Russian Dressing:
- 1 cup mayonnaise
- 1/4 cup sugar-free ketchup
- 4 tsp horseradish
- 1 tsp hot sauce
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- Pinch of pepper
Instructions
- Melt butter in a skillet over medium heat.
- Add corned beef and sauté, covered, for 5 minutes.
- Add coleslaw mix, cover, and cook for another 5 minutes until slightly softened.
- Stir together and top with Swiss cheese. Cover and allow cheese to melt, or place under broiler until bubbly.
- Drizzle with prepared Russian dressing and top with sliced scallions before serving.
