Description

This quick and easy Keto Reuben in a Bowl has all the delicious flavors of a classic Reuben sandwich without all the carbs. Loaded with corned beef, melty Swiss cheese, and creamy Russian dressing, it’s perfect for a low-carb dinner!


Ingredients

  • 1 bag coleslaw mix
  • 1 pound corned beef, cut into strips
  • 23 tbsp butter
  • 1 cup Swiss cheese, shredded
  • Scallions, sliced
  • For the Russian Dressing:
  • 1 cup mayonnaise
  • 1/4 cup sugar-free ketchup
  • 4 tsp horseradish
  • 1 tsp hot sauce
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • Pinch of pepper


Instructions

  1. Melt butter in a skillet over medium heat.
  2. Add corned beef and sauté, covered, for 5 minutes.
  3. Add coleslaw mix, cover, and cook for another 5 minutes until slightly softened.
  4. Stir together and top with Swiss cheese. Cover and allow cheese to melt, or place under broiler until bubbly.
  5. Drizzle with prepared Russian dressing and top with sliced scallions before serving.
