Description

A creamy, copycat version of KFC’s famous macaroni salad. Quick to make and perfect as a side dish for fried chicken or sandwiches.

Ingredients

  • 8 oz elbow macaroni
  • 2 ribs celery, finely minced
  • ¼ cup carrots, thinly diced or grated
  • 1 tablespoon onion, minced
  • ⅓ cup sweet pickles, diced
  • 1 ½ cups Miracle Whip
  • ½ cup Hellman’s mayonnaise
  • ¼ teaspoon black pepper
  • ¼ teaspoon dry mustard
  • 1 teaspoon sugar
  • ½ teaspoon salt

Instructions

  1. Cook macaroni according to package directions. Drain and let cool naturally (do not rinse).
  2. In a large bowl, combine celery, carrots, onion, pickles, Miracle Whip, mayonnaise, pepper, dry mustard, sugar, and salt. Mix well.
  3. Fold in cooled macaroni until fully incorporated.
  4. Cover and refrigerate for several hours before serving on a bed of fresh lettuce.

Notes

  • Do not rinse macaroni to retain natural flavor and texture.
  • Chill for several hours to let flavors meld together.
