Description
A creamy, copycat version of KFC’s famous macaroni salad. Quick to make and perfect as a side dish for fried chicken or sandwiches.
Ingredients
- 8 oz elbow macaroni
- 2 ribs celery, finely minced
- ¼ cup carrots, thinly diced or grated
- 1 tablespoon onion, minced
- ⅓ cup sweet pickles, diced
- 1 ½ cups Miracle Whip
- ½ cup Hellman’s mayonnaise
- ¼ teaspoon black pepper
- ¼ teaspoon dry mustard
- 1 teaspoon sugar
- ½ teaspoon salt
Instructions
- Cook macaroni according to package directions. Drain and let cool naturally (do not rinse).
- In a large bowl, combine celery, carrots, onion, pickles, Miracle Whip, mayonnaise, pepper, dry mustard, sugar, and salt. Mix well.
- Fold in cooled macaroni until fully incorporated.
- Cover and refrigerate for several hours before serving on a bed of fresh lettuce.
Notes
- Do not rinse macaroni to retain natural flavor and texture.
- Chill for several hours to let flavors meld together.
- Optional: add a sprinkle of paprika for garnish.
