Delicious and creamy Lemon Blueberry Cheesecake Bars infused with fresh lemon and blueberries. Perfect for a sweet treat, these bars are bright, tangy, and satisfying.
Ingredients
- 1.5 cups graham cracker crumbs
- 0.5 cups unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 0.75 cups sour cream
- Zest of 2 lemons
- 0.5 cups fresh lemon juice
- 1 tsp vanilla extract
- 1 cup fresh blueberries (plus extra for topping)
Instructions
- Preheat oven to 175°C (350°F) and line an 8×8-inch pan with parchment paper, leaving overhang.
- Combine graham cracker crumbs and melted butter. Press into pan to form crust. Bake 10 minutes. Cool slightly.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well.
- Stir in sour cream, lemon zest, lemon juice, and vanilla extract until combined.
- Fold in blueberries gently.
- Pour mixture over crust and spread evenly.
- Bake 25–30 minutes until edges set but center slightly jiggly.
- Cool in oven with door slightly open for 1 hour, then refrigerate at least 4 hours or overnight.
- Lift bars using parchment overhang and cut into squares. Serve chilled.
