Description

Loaded Veggie Burger Salad is packed with all the classic burger toppings including crisp romaine lettuce, juicy tomatoes, creamy avocado, cheddar cheese, pickles, and crumbled veggie burgers, finished with a flavorful honey Dijon dressing.


Ingredients

For the Veggie Burger Salad

  • 4 cups romaine lettuce, chopped
  • 2 small tomatoes, chopped
  • 1 medium avocado, chopped
  • 1/4 cup red onion, diced
  • 6 dill pickle slices, chopped
  • 1/2 cup cheddar cheese, cubed
  • 2 cooked veggie burgers, crumbled

For the Honey Dijon Dressing

  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 small garlic clove, minced
  • 1/4 tsp salt
  • Black pepper, to taste


Instructions

  1. Divide the chopped romaine lettuce between two salad bowls.
  2. Top each bowl with tomatoes, avocado, red onion, pickles, and cheddar cheese.
  3. Crumble one cooked veggie burger over each salad.
  4. To make the dressing, combine olive oil, apple cider vinegar, Dijon mustard, honey, garlic, salt, and black pepper in a jar with a lid.
  5. Shake well until fully combined and emulsified.
  6. Drizzle the dressing over the salads and serve immediately.
