Ingredients
For the Veggie Burger Salad
- 4 cups romaine lettuce, chopped
- 2 small tomatoes, chopped
- 1 medium avocado, chopped
- 1/4 cup red onion, diced
- 6 dill pickle slices, chopped
- 1/2 cup cheddar cheese, cubed
- 2 cooked veggie burgers, crumbled
For the Honey Dijon Dressing
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 2 tbsp Dijon mustard
- 1 tbsp honey
- 1 small garlic clove, minced
- 1/4 tsp salt
- Black pepper, to taste
Instructions
- Divide the chopped romaine lettuce between two salad bowls.
- Top each bowl with tomatoes, avocado, red onion, pickles, and cheddar cheese.
- Crumble one cooked veggie burger over each salad.
- To make the dressing, combine olive oil, apple cider vinegar, Dijon mustard, honey, garlic, salt, and black pepper in a jar with a lid.
- Shake well until fully combined and emulsified.
- Drizzle the dressing over the salads and serve immediately.
