McGriddle Bites are sweet, savory, cheesy sausage muffins inspired by the classic breakfast sandwich—perfect for grab-and-go mornings, meal prep, or brunch. They combine pancake batter, maple syrup, sausage, and cheese into soft, fluffy bites.
Ingredients
- For the Muffins:
- 1 pound breakfast sausage (regular pork sausage)
- 2 cups Hungry Jack Pancake Mix (just-add-water type)
- 1 cup water
- 1/4 cup maple syrup (pure maple syrup preferred)
- 1 cup cheddar cheese, shredded
- Optional Add-Ins:
- 1/4 cup diced jalapeños (for a spicy kick)
- 1/2 cup blueberries (for a sweet contrast)
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or line with muffin cups.
- Cook the breakfast sausage in a skillet over medium heat until browned. Drain excess grease and let cool slightly.
- In a mixing bowl, combine pancake mix, water, and maple syrup. Stir until just combined—do not overmix.
- Add cooked sausage and shredded cheddar cheese to the batter. Fold gently.
- If using, fold in jalapeños or blueberries.
- Scoop batter into the muffin tin, filling each cup about ¾ full.
- Bake for 15–18 minutes or until golden and a toothpick inserted comes out clean.
- Cool for a few minutes before removing from the pan. Serve warm or store for meal prep.
