Description
These Meat & Mash Cupcakes are savory, creamy, and incredibly fun! Perfect for kids, parties, or a unique dinner twist, combining seasoned ground meat topped with fluffy mashed potato “frosting” and a sweet carrot garnish.
Ingredients
- For the meat base:
- 1 lb ground beef (or ground chicken)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 medium carrot, grated
- 1 tbsp Worcestershire or soy sauce (halal)
- 1 tbsp tomato paste
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt & pepper, to taste
- 1 tbsp vegetable oil
- For the mashed potato frosting:
- 3 medium potatoes, peeled & diced
- 2 tbsp butter
- 1/4 cup heavy cream or milk
- Salt & pepper, to taste
- 1/4 tsp turmeric
- For the sweet carrot topping:
- 2 carrots, finely chopped
- 1 tbsp butter
- 1 tsp honey
- Pinch of salt
Instructions
- Prepare the mashed potato frosting: Boil potatoes in salted water until soft. Drain, add butter, milk or cream, turmeric, salt, and pepper. Mash until smooth and set aside.
- Make the meat base: Heat oil in a pan. Add onion and garlic; sauté until soft. Add ground beef or chicken and cook until browned. Mix in grated carrot, Worcestershire or soy sauce, tomato paste, paprika, thyme, salt, and pepper. Cook for 5–7 minutes until well combined.
- Assemble the cupcakes: Preheat oven to 375°F (190°C). Grease a muffin tin. Spoon the meat mixture into each cup, pressing gently to compact.
- Pipe the mashed potato: Transfer mashed potatoes to a piping bag and swirl on top of each meat cup to resemble frosting.
- Prepare the sweet carrots: In a small pan, sauté chopped carrots in butter until soft. Add honey and a pinch of salt; cook another 1–2 minutes.
- Finish and bake: Spoon a small amount of sweet carrots on top of each mashed potato swirl. Bake for 10 minutes to lightly set the topping.
- Serve warm and enjoy your fun, savory cupcakes!
Notes
- Use a star piping tip to get a real cupcake frosting look.
- You can replace beef with turkey for a lighter version.
- Add peas or corn inside the meat mixture for extra color.
