Description
Mediterranean Baked Feta Eggs is a quick and comforting breakfast dish with creamy feta, roasted cherry tomatoes, garlic, shallots, and perfectly baked eggs. Serve with pita or crusty bread for a Mediterranean-inspired meal.
Ingredients
- 200 g feta cheese block
- 1 cup cherry tomatoes
- 2 cloves garlic, minced
- 1 small shallot, finely chopped
- 3 large eggs
- 2 tbsp olive oil
- 1/2 tsp dried oregano
- 1/4 tsp crushed red pepper flakes
- Salt, to taste
- Fresh parsley or basil, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In an oven-safe skillet, sauté olive oil, garlic, and shallots over medium heat until softened, about 2–3 minutes.
- Add cherry tomatoes and cook until blistered, 5–7 minutes.
- Mix in oregano, red pepper flakes, and salt. Cook briefly.
- Nestle chunks of feta into the tomato mixture and simmer for 2 minutes.
- Create wells in the mixture and crack an egg into each well.
- Transfer the skillet to the oven and bake for 8–10 minutes until whites are set but yolks remain slightly runny.
- Rest for 2 minutes, garnish with fresh herbs and a drizzle of olive oil, then serve.
Notes
- Serve hot and fresh. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
- Substitute fresh herbs like dill or cilantro if desired.
