Description

Mediterranean Baked Feta Eggs is a quick and comforting breakfast dish with creamy feta, roasted cherry tomatoes, garlic, shallots, and perfectly baked eggs. Serve with pita or crusty bread for a Mediterranean-inspired meal.


Ingredients

  • 200 g feta cheese block
  • 1 cup cherry tomatoes
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 3 large eggs
  • 2 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes
  • Salt, to taste
  • Fresh parsley or basil, for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In an oven-safe skillet, sauté olive oil, garlic, and shallots over medium heat until softened, about 2–3 minutes.
  3. Add cherry tomatoes and cook until blistered, 5–7 minutes.
  4. Mix in oregano, red pepper flakes, and salt. Cook briefly.
  5. Nestle chunks of feta into the tomato mixture and simmer for 2 minutes.
  6. Create wells in the mixture and crack an egg into each well.
  7. Transfer the skillet to the oven and bake for 8–10 minutes until whites are set but yolks remain slightly runny.
  8. Rest for 2 minutes, garnish with fresh herbs and a drizzle of olive oil, then serve.

Notes

  • Serve hot and fresh. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
