Description
This Mediterranean Lamb Stew features tender chunks of lamb simmered with fire-roasted tomatoes, aromatic spices, garlic, onion, and fresh herbs. It’s hearty, flavorful, and perfect for a comforting family dinner.
Ingredients
- 2 tbsp extra virgin olive oil
- 2 pounds boneless lamb stew meat
- 2 tsp kosher salt
- 1/4 tsp coarse black pepper
- 1 cup chopped onion (about 1 onion)
- 6 cloves garlic, finely chopped
- 2 tsp cumin
- 14.5 oz can fire-roasted tomatoes
- 4 cups vegetable broth
- 1/3 cup finely chopped mint
- 1 cup finely chopped parsley
- Lemon wedges, optional for serving
Instructions
- In a pot over medium-high heat, add olive oil, lamb, salt, and pepper. Stir-fry until browned and caramelized.
- Lower heat to medium. Add onion and garlic, sauté until softened.
- Add cumin and fry for 15 seconds until aromatic.
- Deglaze the pan with fire-roasted tomatoes and vegetable broth.
- Mix in parsley and mint. Partially cover with a lid and bring to a boil.
- Reduce to a gentle simmer and cook for 60 minutes, or until lamb is fork-tender.
- Ladle and serve hot with lemon wedges, if desired.
Notes
- Serve with rice, couscous, or crusty bread to soak up the flavorful sauce.
- Use grass-fed lamb for a richer taste.
