Description

This Mediterranean Lamb Stew features tender chunks of lamb simmered with fire-roasted tomatoes, aromatic spices, garlic, onion, and fresh herbs. It’s hearty, flavorful, and perfect for a comforting family dinner.


Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 pounds boneless lamb stew meat
  • 2 tsp kosher salt
  • 1/4 tsp coarse black pepper
  • 1 cup chopped onion (about 1 onion)
  • 6 cloves garlic, finely chopped
  • 2 tsp cumin
  • 14.5 oz can fire-roasted tomatoes
  • 4 cups vegetable broth
  • 1/3 cup finely chopped mint
  • 1 cup finely chopped parsley
  • Lemon wedges, optional for serving


Instructions

  1. In a pot over medium-high heat, add olive oil, lamb, salt, and pepper. Stir-fry until browned and caramelized.
  2. Lower heat to medium. Add onion and garlic, sauté until softened.
  3. Add cumin and fry for 15 seconds until aromatic.
  4. Deglaze the pan with fire-roasted tomatoes and vegetable broth.
  5. Mix in parsley and mint. Partially cover with a lid and bring to a boil.
  6. Reduce to a gentle simmer and cook for 60 minutes, or until lamb is fork-tender.
  7. Ladle and serve hot with lemon wedges, if desired.

  • Serve with rice, couscous, or crusty bread to soak up the flavorful sauce.
  • Use grass-fed lamb for a richer taste.
