Ingredients

  • 1 lb sirloin steak
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 2 cups cooked grains (brown rice or quinoa)
  • Cherry tomatoes
  • Cucumber
  • Red onion
  • Kalamata olives
  • Tzatziki sauce (Greek yogurt, grated cucumber, dill)
  • Salt and pepper, to taste
  • Optional herbs: oregano, thyme


Instructions

  1. Marinate the steak: combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat steak and let marinate at least 30 minutes.
  2. Prepare tzatziki: mix Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper; refrigerate.
  3. Cook steak: heat skillet over medium-high and sear steak 4–5 minutes per side to desired doneness. Let rest, then slice.
  4. Assemble bowls: layer cooked grains in bowls, top with sliced steak and fresh vegetables. Drizzle with tzatziki sauce and serve.
