Ingredients
- 1 lb sirloin steak
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 2 cups cooked grains (brown rice or quinoa)
- Cherry tomatoes
- Cucumber
- Red onion
- Kalamata olives
- Tzatziki sauce (Greek yogurt, grated cucumber, dill)
- Salt and pepper, to taste
- Optional herbs: oregano, thyme
Instructions
- Marinate the steak: combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat steak and let marinate at least 30 minutes.
- Prepare tzatziki: mix Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper; refrigerate.
- Cook steak: heat skillet over medium-high and sear steak 4–5 minutes per side to desired doneness. Let rest, then slice.
