Description

A rich and decadent mocha fudge layer cake that combines the flavors of coffee and chocolate in a moist, layered dessert.


Ingredients

    • 2 cups All-purpose flour
    • 2 cups Granulated sugar
    • 3/4 cup Unsweetened cocoa powder
    • 2 teaspoons Baking soda
    • 1 teaspoon Baking powder
    • 1 teaspoon Salt
    • 1 cup Buttermilk
    • 1/2 cup Vegetable oil
    • 2 Large eggs
    • 2 teaspoons Vanilla extract
    • 1 cup Hot brewed coffee

 

    • Mocha Fudge Frosting
    • 1 cup Unsweetened cocoa powder
    • 1/2 cup Butter, softened
    • 4 cups Powdered sugar
    • 1/3 cup Brewed coffee
    • 1 teaspoon Vanilla extract

  • Chocolate shavings or cocoa powder (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Whisk together until well mixed.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until just combined.
  4. Carefully stir in the hot brewed coffee until the batter is smooth (the batter will be thin).
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. To make the frosting, combine softened butter and cocoa powder. Mix until well blended.
  9. Gradually add the powdered sugar, alternating with brewed coffee, until frosting is smooth and creamy.
  10. Mix in vanilla extract.
  11. Place one cake layer on a serving plate and spread frosting on top.
  12. Add the second layer and frost the top and sides with remaining frosting.
  13. Garnish with chocolate shavings or cocoa powder if desired.
  14. Slice and enjoy!
