Description
Moist and Delectable Tiramisu Muffins are soft, coffee-infused muffins topped with a light mascarpone cream and dusted with cocoa powder for a perfect tiramisu experience in a handheld treat.
Ingredients
- For the Muffins:
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, melted
- 2 large eggs
- ½ cup buttermilk
- ¼ cup strong brewed coffee (cooled)
- 1 tsp vanilla extract
- ½ cup mini chocolate chips (optional)
- For the Coffee Soak:
- ¼ cup strong hot coffee
- 1 tbsp sugar
- 1 tbsp coffee liqueur (optional)
- For the Mascarpone Cream:
- 8 oz mascarpone cheese
- ¼ cup powdered sugar
- ½ cup heavy cream
- ½ tsp vanilla extract
- Cocoa powder, for dusting
Instructions
- Make the Muffins: Preheat oven to 350°F (175°C). Line a muffin tin with 12 liners. Whisk flour, baking powder, baking soda, and salt in a bowl. In a separate bowl, mix melted butter, sugar, eggs, buttermilk, coffee, and vanilla. Combine wet and dry ingredients gently. Fold in chocolate chips if using. Divide batter into muffin cups and bake 16–18 minutes. Cool slightly.
- Prepare the Coffee Soak: Mix hot coffee, sugar, and liqueur until sugar dissolves. Brush tops of warm muffins generously.
- Make the Mascarpone Cream: Beat mascarpone with powdered sugar until smooth. Whip heavy cream with vanilla to soft peaks. Fold whipped cream into mascarpone to create light, fluffy topping.
- Finish and Serve: Pipe or spoon mascarpone cream on cooled muffins. Dust with cocoa powder. Refrigerate 20 minutes for best texture before serving.
