These mouthwatering crockpot chicken fajitas are juicy, flavorful, and incredibly easy to make. Slow-cooked with salsa, peppers, and spices, this dish is perfect for busy days and delivers tender, shredded chicken packed with bold fajita flavor.
Ingredients
- 24 oz salsa
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large yellow onion, thinly sliced
- 6 garlic cloves, minced
- 2 lb chicken breast, sliced into strips
- 1 packet fajita seasoning
- 2 tbsp lime juice
- 1 tsp chili powder
Instructions
- Prepare ingredients by slicing chicken, peppers, onion, and mincing garlic.
- Pour half the salsa into the crockpot. Add half the peppers, half the onion, and all garlic.
- Layer chicken on top. Sprinkle fajita seasoning and chili powder evenly.
- Add remaining salsa, peppers, and onions. Drizzle lime juice and gently stir.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is fully cooked.
- Shred chicken in the crockpot and mix well with the sauce and vegetables.
- Serve warm in tortillas or with rice.

- Use halal-certified fajita seasoning if needed.
