Description

These mouthwatering crockpot chicken fajitas are juicy, flavorful, and incredibly easy to make. Slow-cooked with salsa, peppers, and spices, this dish is perfect for busy days and delivers tender, shredded chicken packed with bold fajita flavor.


Ingredients

  • 24 oz salsa
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large yellow onion, thinly sliced
  • 6 garlic cloves, minced
  • 2 lb chicken breast, sliced into strips
  • 1 packet fajita seasoning
  • 2 tbsp lime juice
  • 1 tsp chili powder


Instructions

  1. Prepare ingredients by slicing chicken, peppers, onion, and mincing garlic.
  2. Pour half the salsa into the crockpot. Add half the peppers, half the onion, and all garlic.
  3. Layer chicken on top. Sprinkle fajita seasoning and chili powder evenly.
  4. Add remaining salsa, peppers, and onions. Drizzle lime juice and gently stir.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is fully cooked.
  6. Shred chicken in the crockpot and mix well with the sauce and vegetables.
  7. Serve warm in tortillas or with rice.
