Mini no-bake cheesecake bites with a chocolate cookie crust, creamy chocolate cheesecake filling, and a drizzle of caramel for a decadent treat.
Ingredients

- 1 1/2 cups chocolate cookie crumbs
- 5 tbsp unsalted butter, melted

- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream, cold
- 1/3 cup chocolate ganache or melted semi-sweet chocolate
- For the Topping:
- 1/2 cup caramel sauce
- Chocolate shavings or mini chocolate chips
- Flaky sea salt (optional)
Instructions
- Prepare the Crust: Mix cookie crumbs with melted butter. Press into mini muffin pan or silicone mold. Chill 15 minutes.
- Make Cheesecake Filling: Beat cream cheese with powdered sugar and vanilla. Add chocolate ganache and mix until smooth.
- Whip the Cream: Whip cold heavy cream to stiff peaks. Fold gently into cheesecake mixture.
- Assemble Bites: Spoon or pipe filling over chilled crusts. Smooth tops and refrigerate at least 2 hours until set.
- Add Toppings and Serve: Drizzle caramel, sprinkle chocolate shavings, and add a pinch of flaky sea salt. Serve chilled.
