Description

Mini no-bake cheesecake bites with a chocolate cookie crust, creamy chocolate cheesecake filling, and a drizzle of caramel for a decadent treat.


Ingredients

    • For the Crust:
    • 1 1/2 cups chocolate cookie crumbs
    • 5 tbsp unsalted butter, melted

 

    • For the Cheesecake Filling:
    • 8 oz cream cheese, softened
    • 1/2 cup powdered sugar
    • 1 tsp vanilla extract
    • 1 cup heavy whipping cream, cold
    • 1/3 cup chocolate ganache or melted semi-sweet chocolate

 

  • For the Topping:
  • 1/2 cup caramel sauce
  • Chocolate shavings or mini chocolate chips
  • Flaky sea salt (optional)


Instructions

  1. Prepare the Crust: Mix cookie crumbs with melted butter. Press into mini muffin pan or silicone mold. Chill 15 minutes.
  2. Make Cheesecake Filling: Beat cream cheese with powdered sugar and vanilla. Add chocolate ganache and mix until smooth.
  3. Whip the Cream: Whip cold heavy cream to stiff peaks. Fold gently into cheesecake mixture.
  4. Assemble Bites: Spoon or pipe filling over chilled crusts. Smooth tops and refrigerate at least 2 hours until set.
  5. Add Toppings and Serve: Drizzle caramel, sprinkle chocolate shavings, and add a pinch of flaky sea salt. Serve chilled.
