Description

A refreshing and creamy no-bake cheesecake infused with fresh orange juice and zest, perfect for any gathering or a simple afternoon treat.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 cup fresh orange juice
  • Zest of 1 orange
  • 1 teaspoon vanilla extract
  • 1 envelope (about 2 tablespoons) unflavored gelatin
  • 2 tablespoons cold water
  • Orange slices or zest for garnish (optional)


Instructions

  1. In a bowl, mix graham cracker crumbs with melted butter until combined. Press firmly into the bottom of a 9-inch springform pan.
  2. Beat softened cream cheese in a large bowl until smooth. Gradually add powdered sugar and mix well.
  3. Add heavy whipping cream, orange juice, orange zest, and vanilla extract. Beat until light and fluffy.
  4. Sprinkle gelatin over cold water and let bloom for 5 minutes. Microwave for 10 seconds until dissolved.
  5. Slowly pour the gelatin mixture into the cheesecake mixture, mixing until fully incorporated.
  6. Pour filling over the crust and smooth the top. Cover and refrigerate for at least 4 hours or overnight.
  7. Remove from pan, garnish with orange slices or zest, and serve.
