Description

A refreshing and creamy no-bake cheesecake with a delightful orange and pineapple swirl, perfect for warm weather.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup crushed pineapple, drained
  • 1 cup orange juice
  • 1 tbsp orange zest
  • 1 tbsp unflavored gelatin
  • 2 tbsp cold water


Instructions

  1. Mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan. Refrigerate for 30 minutes.
  2. Beat cream cheese until smooth. Gradually mix in powdered sugar and vanilla.
  3. Whip heavy cream to stiff peaks and gently fold into the cream cheese mixture.
  4. Bloom gelatin in cold water for 5 minutes, then microwave about 10 seconds until dissolved. Stir in pineapple, orange juice, and zest.
  5. Divide cream cheese mixture in half. Fold pineapple-orange mixture into one half.
  6. Spread plain cheesecake mixture over crust, then spoon pineapple-orange mixture on top. Swirl gently with a knife.
  7. Cover and refrigerate at least 4 hours or overnight until set.
  8. Slice and serve chilled.

Notes

  • Add shredded coconut to the crust for a tropical twist.
  • Top with fresh fruit before serving if desired.
  • Increase powdered sugar for a sweeter cheesecake.
