Description
A refreshing and creamy no-bake cheesecake with a delightful orange and pineapple swirl, perfect for warm weather.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1 cup crushed pineapple, drained
- 1 cup orange juice
- 1 tbsp orange zest
- 1 tbsp unflavored gelatin
- 2 tbsp cold water
Instructions
- Mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan. Refrigerate for 30 minutes.
- Beat cream cheese until smooth. Gradually mix in powdered sugar and vanilla.
- Whip heavy cream to stiff peaks and gently fold into the cream cheese mixture.
- Bloom gelatin in cold water for 5 minutes, then microwave about 10 seconds until dissolved. Stir in pineapple, orange juice, and zest.
- Divide cream cheese mixture in half. Fold pineapple-orange mixture into one half.
- Spread plain cheesecake mixture over crust, then spoon pineapple-orange mixture on top. Swirl gently with a knife.
- Cover and refrigerate at least 4 hours or overnight until set.
- Slice and serve chilled.
Notes
- Add shredded coconut to the crust for a tropical twist.
- Top with fresh fruit before serving if desired.
- Increase powdered sugar for a sweeter cheesecake.
