Description
One Pot Chicken Fajita Pasta is a creamy, hearty, and flavorful fusion dish made with tender chicken, bell peppers, pasta, and a rich fajita-spiced sauce cooked all in one pot for easy cleanup.
Ingredients
- 4 tbsp olive oil, divided
- 2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
- 2 tbsp fajita or taco seasoning
- 1 yellow onion, diced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 4 cloves garlic, minced
- 2 cups reduced-sodium chicken stock
- 1/2 cup heavy cream
- 10 oz diced tomatoes (canned)
- 8 oz bow tie pasta
- Salt and black pepper to taste
For Serving
- Lime wedges
- Sour cream
- Green onions, sliced
- Cilantro, chopped
Instructions
- Heat 2 tbsp olive oil in a large pot over medium-high heat.
- Cook chicken with half the fajita seasoning until browned. Remove and set aside.
- Add remaining oil, then sauté onion and bell peppers with remaining seasoning until softened.
- Add garlic and cook for 30 seconds.
- Return chicken and vegetables to a plate.
- Pour chicken stock, cream, diced tomatoes, and pasta into the pot.
- Scrape the bottom, bring to a boil, then reduce heat.
- Cover and simmer for about 10 minutes, stirring occasionally.
- Return chicken and vegetables to the pot and mix well.
- Cook until pasta is tender and sauce is creamy.
- Serve with lime, sour cream, cilantro, and green onions.
Notes
- Stir occasionally to prevent pasta from sticking.
- Add a splash of chicken stock if sauce becomes too thick.
- Adjust fajita seasoning to taste for more or less spice.
