Description

One Pot Chicken Fajita Pasta is a creamy, hearty, and flavorful fusion dish made with tender chicken, bell peppers, pasta, and a rich fajita-spiced sauce cooked all in one pot for easy cleanup.


Ingredients

  • 4 tbsp olive oil, divided
  • 2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 tbsp fajita or taco seasoning
  • 1 yellow onion, diced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 4 cloves garlic, minced
  • 2 cups reduced-sodium chicken stock
  • 1/2 cup heavy cream
  • 10 oz diced tomatoes (canned)
  • 8 oz bow tie pasta
  • Salt and black pepper to taste

For Serving

  • Lime wedges
  • Sour cream
  • Green onions, sliced
  • Cilantro, chopped


Instructions

  1. Heat 2 tbsp olive oil in a large pot over medium-high heat.
  2. Cook chicken with half the fajita seasoning until browned. Remove and set aside.
  3. Add remaining oil, then sauté onion and bell peppers with remaining seasoning until softened.
  4. Add garlic and cook for 30 seconds.
  5. Return chicken and vegetables to a plate.
  6. Pour chicken stock, cream, diced tomatoes, and pasta into the pot.
  7. Scrape the bottom, bring to a boil, then reduce heat.
  8. Cover and simmer for about 10 minutes, stirring occasionally.
  9. Return chicken and vegetables to the pot and mix well.
  10. Cook until pasta is tender and sauce is creamy.
  11. Serve with lime, sour cream, cilantro, and green onions.

Notes

  • Stir occasionally to prevent pasta from sticking.
  • Add a splash of chicken stock if sauce becomes too thick.
  • Adjust fajita seasoning to taste for more or less spice.
