Description

These oven-roasted garlic cabbage steaks are tender on the inside, crispy on the edges, and full of savory flavor. A simple, healthy, and budget-friendly side dish.


Ingredients

  • 1 large green or red cabbage
  • 3 tablespoons olive oil (or melted butter for a richer flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • Optional toppings: grated Parmesan cheese, red pepper flakes, or fresh parsley


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Remove any damaged outer leaves from the cabbage. Slice the cabbage into 1-inch thick “steaks,” keeping the core intact to hold the slices together.
  3. Place cabbage steaks on the prepared baking sheet.
  4. In a small bowl, mix olive oil (or butter) with garlic powder, smoked paprika, onion powder, dried thyme, salt, and black pepper.
  5. Brush the seasoning mixture evenly over the tops of the cabbage steaks.
  6. Roast for 25–35 minutes, depending on thickness, until edges are browned and crispy.
  7. Top with Parmesan cheese, parsley, or red pepper flakes if desired. Serve immediately.

Notes

  • For extra crispiness, broil for the last 2–3 minutes.
  • Red cabbage gives a deeper color, but green cabbage caramelizes more easily.
