Description
A fresh summer salad loaded with juicy peaches, blueberries, pecans, feta cheese, crisp cucumbers, and mixed lettuce, all topped with a homemade lemon vinaigrette.
Ingredients
- 1/2 pint fresh blueberries
- 1–2 fresh peaches, sliced
- 1/2 English cucumber, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup raw pecans, chopped
- 1 head green leaf lettuce, washed and torn
- 1 head Boston lettuce, washed and torn
- 3 tbsp fresh lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tbsp fresh basil, chopped
- Salt and pepper to taste
Instructions
- In a jar, combine lemon juice, Dijon mustard, honey, olive oil, basil, salt, and pepper. Shake well.
- Wash and tear lettuce into bite-sized pieces.
- Slice peaches and cucumber.
- Chop pecans and crumble feta.
- Assemble salad with lettuce, fruit, cucumber, pecans, and feta.
- Drizzle dressing just before serving and toss gently.
Notes
- Use ripe, fresh fruit for best flavor.
- Dry lettuce thoroughly to avoid watery salad.
- Add chicken or shrimp for a complete meal.
- Serve immediately after dressing.
