Description

A fresh summer salad loaded with juicy peaches, blueberries, pecans, feta cheese, crisp cucumbers, and mixed lettuce, all topped with a homemade lemon vinaigrette.


Ingredients

  • 1/2 pint fresh blueberries
  • 1–2 fresh peaches, sliced
  • 1/2 English cucumber, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup raw pecans, chopped
  • 1 head green leaf lettuce, washed and torn
  • 1 head Boston lettuce, washed and torn
  • 3 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp fresh basil, chopped
  • Salt and pepper to taste


Instructions

  1. In a jar, combine lemon juice, Dijon mustard, honey, olive oil, basil, salt, and pepper. Shake well.
  2. Wash and tear lettuce into bite-sized pieces.
  3. Slice peaches and cucumber.
  4. Chop pecans and crumble feta.
  5. Assemble salad with lettuce, fruit, cucumber, pecans, and feta.
  6. Drizzle dressing just before serving and toss gently.

Notes

  • Use ripe, fresh fruit for best flavor.
  • Dry lettuce thoroughly to avoid watery salad.
  • Add chicken or shrimp for a complete meal.
