Description

A classic French dessert featuring tender baked custard filled with sweet, juicy peaches, lightly golden and elegant yet simple.


Ingredients

  • 2/3 cup all-purpose flour
  • 1/2 cup plus 2 tablespoons sugar, divided
  • 1 teaspoon kosher salt
  • 4 large eggs
  • 2 1/2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract
  • 2 cups heavy whipping cream
  • 3 cups sliced fresh peaches (1/2-inch thick), peeled


Instructions

  1. In a large bowl, whisk flour, 1/2 cup sugar, and salt. Whisk in eggs and extracts until smooth.
  2. Gently whisk in cream until combined. Let batter rest for 10 minutes.
  3. Preheat oven to 350°F (175°C). Lightly spray a 10-inch cast-iron skillet with baking spray.
  4. Pour half of the batter into the pan and bake 10–15 minutes until almost set.
  5. Toss peaches with remaining 2 tablespoons sugar. Arrange over partially baked custard.
  6. Gently stir remaining batter and carefully pour over peaches.
  7. Bake about 40 minutes, until a toothpick inserted in the center comes out clean.
  8. Cool on a wire rack for at least 20 minutes before serving.

Notes

  • Stir remaining batter gently instead of whisking to avoid air bubbles.
  • Serve warm or at room temperature for best texture.
