Description
A classic French dessert featuring tender baked custard filled with sweet, juicy peaches, lightly golden and elegant yet simple.
Ingredients
- 2/3 cup all-purpose flour
- 1/2 cup plus 2 tablespoons sugar, divided
- 1 teaspoon kosher salt
- 4 large eggs
- 2 1/2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 2 cups heavy whipping cream
- 3 cups sliced fresh peaches (1/2-inch thick), peeled
Instructions
- In a large bowl, whisk flour, 1/2 cup sugar, and salt. Whisk in eggs and extracts until smooth.
- Gently whisk in cream until combined. Let batter rest for 10 minutes.
- Preheat oven to 350°F (175°C). Lightly spray a 10-inch cast-iron skillet with baking spray.
- Pour half of the batter into the pan and bake 10–15 minutes until almost set.
- Toss peaches with remaining 2 tablespoons sugar. Arrange over partially baked custard.
- Gently stir remaining batter and carefully pour over peaches.
- Bake about 40 minutes, until a toothpick inserted in the center comes out clean.
- Cool on a wire rack for at least 20 minutes before serving.
Notes
- Stir remaining batter gently instead of whisking to avoid air bubbles.
- Serve warm or at room temperature for best texture.
